Mrs. Mash's Vegetable Soup Recipe
Ingredients:
1 tablespoon of oil
1 large onion
4 large carrots
half a small turnip
1 small leek
1 potato
1 litre of vegetable or ham stock
Wash, peel and finely chop vegetables.
Gently heat oil in a large pot.
Add onion then other vegetables and stir until softened.
Add stock.
Simmer for 30 minutes.
Allow to cool slightly before serving.
Delicious!
Mrs. Mash's Chunky Pancakes
Ingredients:
1lb self-raising flour
6oz caster sugar
4oz sunflower oil
3 eggs
approx 1/2 pint milk
Place eggs, oil, milk and sugar in a bowl and mix well then add to flour slowly and beat until batter is smooth.
Spoon on to a greased griddle or non-stick frying pan. Turn as they go dull and turn now and again over a low heat until they are cooked all the way through and light brown in colour.
